- 1 lb Pasta
- 1 C Leeks cut in half moon shapes and rinsed
- 1/2 lb Bacon ends, rough chopped
- 1/3 C Sundried tomatoes, sliced in strips
- 3 Garlic cloves minced
- 1/3 C Mascarpone
- 1/3 C Heavy cream
- 2/3 C White semi dry wine (choose one you like to drink)
- Salt to taste
- Pinch of red pepper flakes
- Pinch of pepper
- 1/2 C chopped hazelnuts
Throw your chopped hazelnuts into a pie pan with a T of butter and roast in the oven at 350 until golden brown. Don’t forget to stir occassionaly. This should take about 8 minutes, but keep an eye on them.
If you are making pasta from scratch, you can use my recipe on line, witch takes close to 4 min to cook. If you are using store bought pasta, use the directions on the back of the box or bag, usually from 8 to 12 min.
Throw your chopped bacon ends in a hot pan and crispy that pig up Once it is close to the desired crispiness, toss the leeks, garlic, and sun dried tomatoes in. Saute for another 2 to 3 minitues and deglaze with the wine.
Once the wine is reduced by half, add in both the mascarpone and heavy cream. Once it hits your desired thickness,pour the beautiful sauce onto the drained noodles and top with nuts.
