Coconut Curry Stove Bread
- 1 C Coconut milk
- 3 C Flour
- 1 T Yeast
- 1 T Sugar
- 1 T Salt
- 1 T Yellow curry powder
- Olive Oil
Warm up the coconut milk so that it is warm not hot. You want the yeast to activate, but not die. Sprinkle in the yeast, sugar and 1 T olive oil. Let set for a couple minutes. It should get foamy, and you will know that its is activated. Add in half of the flour and let mix for 3 minutes. then throw all other ingredients in. Let the dough mix for a good 4 to 5 minutes. You may need to add more flour or more olive oil. You don’t want the dough sticking to the side of the bowl, but you want the dough sticking together, forming a ball.
Drizzle a little olive oil into a bowl and roll the dough around in the bowl so it coats all sides. Cover with a wet cloth and let set in a warm location until it doubles in size.
Once the dough has doubled, kneed again and place on the baking sheet. Cover the dough again and let rise again for another half an hour.
- 1 T Butter
- Crushed Pepper
- Pre heat oven to 400, cut your butter up, and scatter it on top of the dough along with fresh ground pepper.
Cook until the bread is golden brown!!!! sooooo good!
P.S. I made this bread on my sister’s wood stove that sets in a fireplace cove so it acted as an oven, but typically, I would just make this in the oven at 400 untill golden brown.
