This dish is best cooked with day old rice, but if you don’t have day old rice, it is still scrumtious. I don;t like to dirty too many dishes, so I love being able to cook everything in one pot, or in this case one wok.
I add about 1 – 2t of butter into my wok and add the whipped eggs. Keep the heat on medium to medium low. I really don’t like browning my scrambled eggs. I like keeping them moist and fluffy. Once the eggs are done, place them into a big serving bowl, wipe out the wok and add your meat.
The browning of your meat is to your liking, but I happen to like mine quite browned. You may need to add a little butter or oil to your wok to prevent the meat from sticking. This process is done on high to medium high heat. Once that is done, you throw your meat on top the eggs in the big serving bowl.
Now come all the veggies. I like to keep my veggies pretty eldente while still give them a little bit of browning. Once they are to your liking, throw them into the big bowl.
And lastly comes the already cooked or day old rice and the rest of the butter or oil whichever you chose to use. I brown the rice on high heat. Once the rice is browned and a little crispy, throw all ingredients from the bowl in as well as all the sauces and seasonings. Mix up, taste to see you if you need to add more heat or more salt, and then you are ready to serve.
