- 2 C Flour
- 1 C Sugar
- 3 Eggs
- 1 C hoomemade blackberry jam or compote
- 1 C Vegetable Oil
- 2 t Salt
- 1/4 t Baking powder
- 1 t Baking soda
- 1 T Vanilla
- 1 T Nutmeg
- 1 T Cinnamon
- 2.5-3 Oz Dark Chocolate (close to a king size bar) roughly chopped
Mix flour, baking powder and soda together in one bowl, and in another bowl mix everything else together with the exception of the chocolate. Add the dry ingredients slowly to the wet ingredients.
Once everything is evenly mixed, add the chocolate. You can also throw some fresh backberries into the batter.
Grease your loaf pans, big or small doesn’t matter. Fill the pans about 1/2 to 2/3 high and bake at 350 on the middle rack.
I don’t time because it seams to be different every time, but to know that the bread is done stick a toothpick into the center of the bread. If it comes out clear, then it is done.
